Fruit KabobsPrep time: 25 minutes
Ingredients:

grapes
cantelope
watermelon
pineapple
any other fruit desired

Preparation:
Wash and dice fruit and put into separate bowls.  Using kabob skewers or cocktail toothpicks, build your own fruit kabob with whichever fruits you like best!

Options:
You can use cookie cutters to cut shapes out of cantalope slices and cheese slices.  Then build a fruit and cheese kabob.  Can chill for up to 24 hours.


Yogurt Dipped Strawberries

Prep time: 10 minutes
Ingredients:

1 quart fresh strawberries
1/2 cup low fat vanilla yogurt
1/4 cup granola

Preparation:
Wash and dry strawberries with a paper towel.  Do not remove stems.  Beat yogurt until very smooth.  Place granola in a small bowl.  Dip strawberries, one at a time, first in the yogurt then into the granola.  Enjoy!


Banana in a Blanket

Prep time: 10 minutes
Ingredients
:
1 6 inch whole wheat tortilla
1 TBS creamy peanut butter (or cream cheese)
1 medium szed banana

Preparation:
Lay the tortilla on a plate.  Spread the peanut butter evenly over the surface of the tortilla.  Put the banana on the tortilla and roll it up.  Eat and enjoy!


Bagel Pizza

Prep time: 10 minutes
Ingredients:

plain bagels-halved
canned tomato sauce or prepared jarred pizza sauce
shredded mozzarella cheese
meat toppings (pepperoni, ham, beef, etc)
any other vegge or topping desired

Preparation:
Each person prepares their own bagel half as desired, using tomato base for sauce then top as desired and bake at 350 degrees for 8 - 10 minutes or until cheese is melted.


Fruit Smoothie

Ingredents:
1 banana, sliced
1/4 cup orange juice
1 cup frozen strawberries or peaches
1 container (8 ounces) vanilla flavored nonfat yogurt

Preparation:
Put all ingredients in a blender, mix well.  Serve in glasses, makes 2 servings.


Polka Dot Waffle Sticks

Prep time: 10 minutes
Ingredients:

2 square, whole grain waffles
1 tsp reduced fat cream cheese
1 tsp blackberry, raspberry, or apricot jelly

Preparation:
Toast waffles and cut into 6 sticks (3 sticks per waffle)  Spread each stick with cream cheese and use a spoon or squeeze bottle to dot sticks wth jelly.  Serves 2.



Yummy Dip

Prep time: 5 mnutes
Ingredients:

1 package (8 ounce) nonfat cream cheese
1 TBS nonfat milk
3 TBS packed dark-brown sugar
1/4 tsp pumpkin pie spice
Apple wedges, pear wedges, carrot and celery sticks for dipping.

Preparation:
Place cream cheese and milk in food processor or blender.  Pulse until creamy, do not overbeat.  Add brown sugar and pumpkin pie spice.  Mix until blended.  Remove mixture to small bowl.  Serve with dippers.  Refrigerate unused protion of dip.


Cereal Clusters

Ingredients:
3 cups Yogurt-Burst Cheerios or similar whole grain cereal
1/2 cup chopped dried strawberries
1 1/2 cups white chocolate chips

Preparation:
Place paper liners in 24 mini muffin cups.  Toss the whole grain cereal and chopped dried strawberries in a medum bowl.  Melt the white chocolate in a microwave on high for 1 minute, stirring it frequently until melted.  Combine with the cereal and strawberry mixture.  Spoon into prepared cups and refrigerate until the clusters are firm, about 5 minutes.

No Bake Cookies

2 cups sugar
6 tbs cocoa
1 stick butter or margarine
1/2 cup milk

Mix together and bring to a boil. Boil for 1 minute, remove from heat. Add 1/2 tsp vanilla and stir in 3 cups of quick oats. Drop by spoonfuls on cookie sheet or waxed paper.
